Fassone di Razza Piemontese meat is an absolute excellence in the world gastronomic panorama, the flagship of Made in Italy . It stands out from all other meats for its superior tenderness, instrumentally demonstrated, and for its extraordinary leanness, two characteristics that generally do not go hand in hand and for which Piedmontese represents the classic exception that confirms the rule.

Fassona Piemontese meat is very lean , to the point that in some cuts the presence of fat is less than 2%. In addition to this, the few fats present are of the highest quality. Various scientific analyzes by the University of Milan and Turin have shown that Razza Piemontese is the meat that comes closest to fish in terms of the relationship between the beneficial unsaturated fatty acids (omega-3 and omega-6), useful for containing the cardiovascular risk, and saturated fats, which are harmful to health.

The meat produced by Tallone obtained the prestigious IGP recognition 'Vitellone Piemontese della Coscia' in 2022, guaranteeing noble cuts with the right maturation times (maturing) and of great culinary interest.
