    Fassona tongue is the basic ingredient of Bollito alla Piemontese. It is pink, crumbly and has a delicate flavour. After boiling for about 1 hour it should be cut into compact slices and served with Bagnetto Verde , a typical Piedmontese sauce based on parsley, garlic and anchovies.
